Soy Sauce Fermentation in Progress

The beautiful sight of soy sauce fermentation - rich dark soy sauce collects in the middle giving a deep aroma in the air.
A soy sauce fermentation urn with rich dark black soy beans surrounding the bamboo cistern that collects the rich sauce, topped with a micro net to prevent insects from climbing inside.

One of the highlights of our fermentation experience was being fully immersed in the environment of soy sauce production. It engages every sense. As soon as you step into the factory, the air is filled with the aroma of fermenting soybeans, deep, savory, and immediately drawing you in.

Walking through the estate, you begin to follow the process. You hear the rhythm of the shifu turning the soybeans, see rows of ceramic jars that have been used for decades, and handle tools like bamboo ladles worn smooth over time. By the end, you taste the soy sauce itself. It becomes a complete experience, where every sense is anchored in fermentation.
