Larger, centralized factories began adopting modern technology to bridge the gap while preserving the traditional methods that define authentic Guizhou sour soup.

Although machines now assist with tasks such as filling, packaging, and sterilization, fermentation itself remains closely monitored by experienced technicians, many of whom have spent generations working with sour soup. Their role is to ensure that, despite the scale of production, the final product retains the flavor, aroma, and character that locals recognize as true Guizhou sour soup.
