Throughout our journey in the mountains of Guizhou, one thing remained remarkably consistent: almost every household made its own rice wine. Each family had its own recipe, while some techniques and traditions were shared across the community.

With baijiu so deeply embedded in Guizhou’s drinking culture, many local rice wines are also distilled rather than simply fermented, resulting in a stronger spirit enjoyed in villages across the province. Offering guests a cup of homemade rice wine is a gesture of hospitality, inviting them to share in the season’s harvest and the fruits of the family’s labor.
